Ok starting today … it’s game on. The stove and oven are officially off the clock for 31 days. Goodbye baked potatoes. (Disclaimer: The Vitamix stays.)
This is going to be fun. I love a good challenge. A couple of years ago, I did a raw food challenge for an entire month while I did a 30-day hot yoga challenge. I smashed both challenges.
I can’t wait to get started.
This challenge will force me to learn how to use my Instant Pot. (Ugh. I might have to read the manual.) As well I am hoping to learn how to be a little more organized and prepared during the week.
I’ll check in with you once a week and let you know how it is going. I’ll also be posting photos and stories on my Instagram. My plan is to make a meal using every smart program on the Instant Pot. (For obvious reasons I won’t be using the meat button)
Challenge goals:
- Gain more confidence using my Instant Pot
- Add some variety to my diet
- Answer the question – What is PIP? Why would I use it?
- Spend less time in kitchen prepping and cleaning up (I hate the cleaning up bit)
