Dill Pickle Dense Bean Salad

I’ve been saving my dill pickle juice to use for a simple dressing. This Dill Pickle Dense Bean Salad is inspired by my love of dill pickles. It’s so easy to make and it’s packed full of healthy stuff. It’s also one of those salads you make when you want to use whatever is left in your refrigerator before your next grocery haul.

Funny enough I forgot to add diced dill pickles until I added the dressing. It was only when I was putting stuff back in the fridge when I noticed the big jar of pickles.

Dill Pickle Dense Bean Salad

Ingredients

  • 1/2 cup chickpeas
  • 1/2 cup white beans
  • 1/2 green soybeans
  • 1 cup diced celery
  • 1 cup diced red pepper
  • 1/3 cup sesame seeds
  • 1 cup chopped dill pickles
  • 3 tablespoons of olive oil
  • 3 tablespoons of dill pickle juice
  • 1 tablespoon of dijon mustard
  • 1/4 cup chopped fresh dill
  • 2 or 3 cloves of diced garlic
  • Pepper to taste

Directions

  1. Add veggies and pickles to bowl
  2. Add rinsed beans to bowl
  3. Make dressing by whisking olive oil, dill pickle juice, garlic and fresh dill in a separate bowl
  4. Add dressing to the large bowl with beans and veggies. Mix well.
  5. Refrigerate and enjoy!
