Two-ingredient vegan brownies (cake mix hack)

I love cooking hacks especially those that save me time and money. If you ever wanted to make a cake or brownies without the hassle of using half a dozen ingredients, this hack is for you.

All you need is your favourite cake or brownie mix and a can of chickpeas or your favourite bean. That’s it.

The blended chickpea puree acts like eggs and oil, providing moisture and structure. You don’t even have to add water. It’s magic.

And it does not taste like chickpeas. I promise.

I’ve tried this cake mix hack with other flavours, and I have never been disappointed. The chickpeas add fiber and some extra protein, giving these brownies a slightly healthier edge.

Two-ingredient chickpea brownies (cake mix hack)

Ingredients

  • 1 box of cake mix or brownie mix (any brand or flavour)
  • 1 can (15 oz / 500 g) of chickpeas, undrained
  • I cup water

Directions

  1. Add rinsed chickpeas to high speed blender
  2. Add one cup of water
  3. Blend until it is a hummus like consistency
  4. Pour the chickpea puree into a bowl with the dry mix and stir until combined
  5. Spread mixture in a greased pan
  6. Bake according to the package directions
  7. Let cool before cutting
