In My Veg Kitchen: Black Bean Power Balls

Since I bought my Instant Pot, I have been obsessed with trying out new recipes that feature the powerhouse trio of black beans, soy beans and chickpeas. The possibilities are endless. And the best part of it? They are all so gosh darn good for you!

After making my black bean brownies, the next logical step for me was to attempt to make “black bean” protein balls. I watched a video from High Carb Hannah who had an easy enough recipe. I didn’t follow her exact measurements or instructions so scroll down to see what I came up with. I’m not a “sweet” person so my flavours were a little on the dark not sweet side.

These black bean power balls are great pick me ups and snacks. I’ve even taken them to the mountains in addition to my usual fruit that I like to eat. I took them into my office for some honest feedback. They suggested adding peanut butter and nuts. That’s why I feed my coworkers, they always give me great tips and suggestions.


Black Bean Power Balls

What you need:

  1. Vitamix or food processor
  2. Mixing bowls
  3. Measuring cups
  4. Container to store your protein balls

Ingredients:

  1. One cup of cooked black beans
  2. 1/2 cup of oatmeal
  3. Six or seven dates
  4. 1 cup of cocoa
  5. 1/4 cup water

Instructions:

  1. Add all dry ingredients to food processor or Vitamix. I started with the Vitamix and it was very hard on the machine. So the second batch I used was in the food processor. Much better.
  2. Add some water if it is too dry.
  3. Once processed, roll into little balls.
  4. Place in fridge for at least an hour until they firm up.

***If you like sweet, add a little maple syrup, agave or peanut butter for flavour. Reduce the cocoa if you are not feeling the dark.
