Recipe: Black Beans, Corn & Lentils

I’m standing in my kitchen staring at the contents in my cupboard. Nothing speaks to me. It’s past dinner. Failing to find chickpeas, I grab a forgotten can of black beans. I place it on the counter. Black beans alone = not exciting. But black beans + corn = possibilities!

I grab a can of corn and a mason jar of red lentils. Magic would happen in my kitchen today! Turning to Google, I found a random recipe with black beans and corn. I wanted to make something that I could eat for lunches too.

A few clicks later I found a simple recipe. Shockingly I had all the ingredients too! Bonus. I modified it slightly because I do not like onions. Plus I wanted to eat lentils so I switched the rice out for lentils.

So Tasty! I’m not sure if it was the cilantro or the lentils (I flavoured my lentils with basil). See my modified recipe below

Ingredients:

  • 1 can Black beans
  • 1 can Corn
  • Dash of JalapeƱo peppers
  • Dash of Olive oil
  • Minced Garlic
  • Dash of Pepper
  • Smidget of Salt
  • A squirt of Hot sauce
  • Half a cup of Cilantro 
  • A spoonful of Lemon juice 
Make:
Basically rinse the black beans and rice. Throw them in a bowl and add the other ingredients. I’m pretty loosey goosey when it comes to measuring. Mix everything together and ta da! you’re got a simple nutritious meal. I combined the mixture with lentils but you can try rice, quinoa or eat it on its own. Enjoy!
