In My Veg Kitchen: Strawberry Ice Cream

Just like everyone else I love a cool treat on a hot summer day.
 
But I also like to eat relatively healthy and know what I am putting into my body.
 
One of the first things I made when I bought my Vitamix was a frozen strawberry “ice cream.” It’s one of the simplest and healthiest treats that you can make to get you through the dog days of summer.
 
All you need is frozen fruit and a high speed blender. No churning required.

This past week I was craving something refreshing after work. I didn’t feel like cooking. (Yes, sometimes I like to skip dinner and simply eat dessert.) Fortunately I had frozen strawberries in the freezer! I made vegan strawberry ice cream. 
 
How to: Toss two cups of frozen strawberries in the Vitamix. I turn the variable up to 10 before hitting high and letting the blades do the work. I use the tamper to press the berries into the blades. The whole job takes less than a minute.
 
There was enough for one generous serving of creamy and smooth vegan strawberry “ice cream.”

There’s NO need to add milk, sugar, yogurt or any other ingredients. But you can always add more stuff like coconut nectar or agave if you want sweetness. I use the “less is more” approach so I can taste the actual fruit. Frozen mango is a favourite. Frozen banana and peanut butter is an awesome combination whenever I need a protein fix.
