Put down that fork: Eating well

It’s only been a few days since I started the weight loss challenge. So far, so good. I feel great. The extra sleep and water sure do help. I bought a crap load of groceries for the week. If you know me, you will know I go to the grocery store at least twice a week because I usually run out of something.

This week I decided to truly buy enough for a week of lunches and dinners. I get lazy sometimes and I don’t want to make my lunch or dinner. It gets boring cooking for one person all the time. One of my goals this month is to NOT EAT OUT FOR LUNCH. I have to write that in all caps because it is super challenging for me.

I work at a desk all day so I like to get out of the humdrum that is my office. The weather is crap so it’s not like I can take a leisurely stroll (but soon!). Plus I love eating at restaurants. In Red Deer, my fav spot for lunch is this Japanese restaurant downtown.

I’m working crazy afternoon shifts this week so it is much easier to eat three meals and snacks. I do not have to rush in the morning and I have time to prepare my meals for the rest of the day.

One of my favs this week has been a makeshift salad and greek yogurt and fruit. Tasty!

It’s also great to have “Spicy” along for the challenge for motivation and inspiration. I have been sending her pics of my food and she has done the same. Fun. Who doesn’t love a nice food pic?

Also Laura borrowed one of my recipe books a few weeks ago. She’s been cooking up a few dishes. When she has extra, she brings me in lunch. Bonus! Less work for me!

So far, so good. Sometimes all you need is a full refrigerator to motivate oneself to cook. Cross your fingers I can keep this up all month!
