How to make a basic vegan stir fry

I keep a lean and mean kitchen. Meaning my fridge is more half empty than it is filled to the brim. Because I hate to throw money in the compost, I don’t go grocery shopping until I absolutely have to.

Often that means I have to be creative on those late to home/post run evenings.

Enter the stir fry.

I can’t tell you how may times a basic stir fry has saved from eating a dinner of toast and peanut butter.

Stir frying is quick, easy and full of possibilities. In case you missed it, the technique originates from China but is used in many Eastern Asia dishes. Simply put ingredients are cooked on high heat with some oil in a wok. Years ago I used to cook everything in my wok. My favourite dish was tofu, mushrooms and spinach. It was amazing.

Funny today I don’t even own a wok. (That happens when you move houses as much as I do.) The point being, you can whip up a stir fry in a wok or a simple pan on high heat.

so what makes a good vegan stir fry?

Honestly it is up to you. I know purists will say you need protein + veg + sauce to make a stir fry. But the culinary world is changing. Be you. Some days I just want the colours of the rainbow in all veg. Other days I am heaping in tofu, beans and tempeh onto my pan.

Here’s the best kept secret

Anything goes. Once you decide what you are adding to your dish have fun. Make sure the pan is hot and ready to go. I don’t use much oil in my cooking, if any, so know you can stir fry without using oil. Use water or veg stock to prevent sticking in the pan. Another good trick is to add frozen veg to the mix.

I always start on a low heat with minced ginger and garlic in the pan. Then I look in the fridge and freezer for inspiration. I always throw things in the pan according to cook time. For example broccoli takes longer, say than red peppers.

I don’t like a lot of sauce – I like to taste my vegetables. In the last minute or so I will pour a homemade sauce or soy sauce over the pan. Be sure to stir your pan often. Add to rice or noodles or eat on its own.

Don’t be afraid of your wok: If you want to add more veg to your diet, start with a stir fry. Quick. Simple.
