In My Veg Kitchen: Best French fries EVER

I want to share with you my latest food obsession. It’s a throwback to my days of only ordering fries at restaurants. Thankfully more and more restaurants are coming around to the bright side. 

French fries have always been my go-to meal when I ate out at restaurants. I absolutely love french fries. Love. I’ve never been into buying the frozen kind at the store. I know if I found a brand that I loved, I would never eat another meal again. (There’s a reason why I don’t own a toaster.)

Over the last few months, I have been obsessed with watching vegan channels on YouTube. Actually it’s a little bit ridiculous. But I have learned some great new vegan/whole food tricks. The most amazing hack is cooking potato wedges on a cooling rack in the oven.

No oil required and the fries are freaking amazing! Besides the obvious (potatoes and oven) … all you need is love … er … a cooling rack … 

Let me walk you through making the best French fires EVER. 

The obvious first step is to grab/buy/dig up some potatoes. I like good old russets. To make fries, you will want to ensure you have large enough potatoes to cut into wedges. 

After washing/scrubbing the dirt off the potatoes, cut into wedges. Put aside in big bowl.

Add spices onto the fries. I like to use garlic, curry and chili.  I shake bowl until the potatoes are well covered with spices. I set my oven to 400. 

The fun part is arranging the wedges on the cooling rack. In the above photo, I may have chopped too many. My rack is a little crowded but the heat should sort out the potatoes. 

Next I pop the tray on the middle rack in the oven. I set my timer for 40 minutes because I like the “almost burned” taste. But I would recommend baking for about 30 to 35 minutes for a nice brown fry.
