Quinoa is the grain that keeps on giving.
Ever try quinoa brittle? All my omnivore and herbivore friends agree – it is a crowd pleaser. As you know I don’t bake often but this seemed easy enough. I whipped up a batch to surprise Brent and Sona. Let’s just say the quinoa brittle did not last long.
I didn’t stray too much from the original recipe that I found online. Although I did go overboard with the chia seeds when I clumsily spilled half a bag into the mixture. Next time (as always) I will pay a little closer attention. I would also switch out the pecans with another nut. They are just so bloody expensive but oh so good!
So if you want to try a different treat, why not whip up a batch of quinoa brittle? Your friends and family will love you more.
Basic Quinoa Brittle
WHAT YOU WILL NEED:
- 1 cup of quinoa
- 1/2 cup chia
- 1/2 cup oats
- 1/2 cup sesame seeds
- 1 cup pecans
- 1/2 maple syrup
- 1/4 cup coconut oil
INSTRUCTIONS:
- Preheat oven to 325F
- Mix the dry ingredients
- Heat the oil and syrup until it’s bubbly
- Pour hot mixture over dry ingredients
- Arrange on parchment paper
- Bake for 15 to 18 minutes
- Check to make sure it’s not burning after 12 minutes
- Let cool. Break up and enjoy!
- If you don’t have coconut oil, use vegan butter.
