Buddha Bowls

Give me all the food. Yes, I have been eating a little more of my share lately.
I blame the huge reduction in my training. My foot still isn’t up to long distances. In order to minimize the damage, I am trying to eat everything on the healthy front. It’s my favourite time of the year with fresh garden food so it’s not too difficult to find healthy. 
The other night I whipped up Buddha Bowl โ€“  a complete healthy meal in one big bowl that will nourish the body and soul. The simple dish is a perfect way to use your spring vegetables and all the leftovers in your fridge too.

When I lived in Asia, I ate a lot of “bowl” food such as bibimbap (so good!). I have had a craving for bibimbap lately so you may see my version of it on the blog anyday now.

As for the Buddha Bowls, you simply take a bunch of colourful fruit, vegetables, seeds, rains and nuts and arrange them in a bowl. Rice or noodles can also be added to the mix. Raw or cooked โ€“ it’s doesn’t matter. I like to be be creative and have fun with whatever I find in my fridge or cupboards. 

This time I used โ€“ lettuce, roasted tomatoes, mushrooms, chickpeas, carrots, raisins, kiwi, strawberries, beans, seaweed and some seeds. I sectioned off the bowl starting with greens and made my way around the bowl. I added a dab of hummus in the middle to finish the bowl. 
Ta da โ€“  a healthy mix of carbs, fats and proteins. You can also add a dressing but I like to let the fruit and vegetables shine.
