Checking in (Another pointless post)

Hey friends. I have been in good spirits all week. But let’s bring on the weekend, okay? Mother Nature is promising to show her sun, shiny side all weekend. Time to bust out the shorts and tanks. 

I’m on fire with running this week and it’s only Thursday! I am on track for my mileage goal and I have picked up the pace on my 10K runs. Success! 

VEG EATS

On another unrelated note, I have been loving Buddha Bowls. Can’t eat enough lately. They are so addictive and filling. Ever get that way where you just want to eat the same thing over and over again until you don’t? I’m so in the zone. 

veg eatsMy roasted chickpeas were slightly overdone. Ahh well it added to the crunch of things. This vegan dish is the perfect meal especially when you get all the necessary carbs, fats and proteins. I usually like to add some fruit or a handful of nuts. Anything goes. 

veg eatsThis bowl is a mixture of what was left in my fridge after not buying groceries for a week. I know it’s not too pretty but it sure tasted good. My lemon-tahini dressing makes everything better. 

And speaking of food … I have to let you in on a little secret. I am a little bit obsessed with watching Freelee the Banana Girl‘s videos. She’s a complete and utter nut case but in a good way. I love her messaging about veganism but I am on the fence about the Raw before 4 diet.

Anyway I encourage you to check out some of her videos and let me know what you think. I particularly like her response videos. They are quite fun. Who knew all these YouTube “turf wars” or whatever were underway? I encourage you to check out some of her videos if you are interested in a good chuckle or want to learn more about a cruelty-free diet.
