Pedro and I had such amazing trip. I hope I don’t leave anything out. The Vegan Beer and Food Festival in Portland and all stops in between were awesome. Because I am a mostly solo traveller, I was worried there would be drama on the road. (I can be stubborn.)
Some hiccups but no major drama. (Although I am confident Pedro will think twice about letting me drive long stretches on our next trip. Let’s just say I can get a little stressed anc crazy behind the wheel.)
We stayed in Fernie on Wednesday night. We thought it would make better sense to get some driving in after work. It was a good move because we took our time getting to Spokane on Thursday. Why rush when you are on holiday?
We stopped at Riverfront Park to stretch our legs and explore a little. It was a beautiful day. I was overdressed. After walking for about half an hour, we decided to run for an hour or so. We would have loved to run longer but we only had a short time to see some of the city.
Pedro ran some 400s while I ran steady. The park is a wonderful spot for runners, walkers and cyclists. There were so many people out and about enjoying the day. It seems to be a popular place for community events.
Pedro has this thing about doing random yoga poses in random places.
We were immediately drawn to the giant metal Canadian flag.
A Chinese Lantern festival was scheduled for later in the week. We would have liked to seen it. This sign brought me back to Asia.
Our Airbnb hosts recommended Mizuna for dinner. (I kept calling it Mizuno.) They told us it was a veg-friendly restaurant. We were pleasantly surprised to be offered a “vegetarian dinner” menu. Little did we know this was the just the beginning of all the amazing vegan food that we would eat in the days to come.
We decided on our game plan early on โ we would order different dishes so we can try everything. To start Pedro ordered a carrot coconut soup. Yum!
I ordered the field and shiitake mushroom wraps. They were so good that I can’t stop thinking about them.
For my main I devoured the grilled ginger tofu salad. I love, love ginger.
Pedro enjoyed a curry samosa dish. The sauce was out of this world delicious.
We wandered around the downtown and checked out Auntie’s bookstore and a few random places after dinner. We had an early start in the morning so we didn’t stay up too late. One day I would love to explore more of Spokane.
