In My Vegetarian Kitchen: Grapefruit Smoothie

My Vitamix gives me much joy, fruits and vegetables on a daily basis. Buying a Vitamix was probably one of the best investment in my health that I made in the last few years.

I love making nut butter, soup and hummus. But most of all, I love whipping up green smoothies. Drinking a green smoothie is a great way to add more vegetables/fruit to your diet. I use a basic formula: water + green veg + fruit. Nothing more, nothing less. (Okay sometimes I will add some chia or ginger when I remember.)

When I first started drinking smoothies, I added a lot of fruit. These days I try to stuff as much kale or spinach or whatever in my blender before I add fruit. Some people like to add protein or agave to their smoothies. It’s not for me because I like to taste the veg in my smoothie. (Except when I am using dandelion greens. Yuck!) 
  
Citrus fruit is my favorite ingredient lately. What a nice change especially in the morning! It’s like I am drinking grapefruit or orange juice. I usually drink a glass before I head out to work. Then I take the rest so I can sip all morning at my desk. And that’s on a good day! I admit some days I have been very rushed and I did not have time to make my smoothie. 
I’m writing this post today in part as a kick in my butt. I have been very rushed in the mornings lately. I need to get better organized. 

What’s your favorite green smoothie? Do you add agave or protein?

  1. Ooh, I have some grapefruit in my fridge right now, I should try this. My go to lately is a bunch of kale, two celery stalks, a kiwi and some mixed berries. I don't add any protein because I like to have two fried eggs alongside my smoothie but I will add in some melted coconut butter for extra fat and deliciousness.

  2. Looks yummy! I've actually has smoothies for the last few days in the morning – not something I can normally do. (I'm on vacation and my kids are with their Grandparents). I like mango-pineapple smoothies but have a great green recipe I love too!

  3. I'm going to ask what may be a dumb question, but does the Vitamix make a big difference for smoothies? I have only ever done fruit smoothies in my rather old blender. If I want to start making veggies smoothies will the Vitamix make them significantly smoother?

  4. I like using coconut water too…and then pineapple. bananas and berries are my usual go to add. I often add some Vega in with it. I use either water or almond milk mostly.
