Lentils & Kale = Tasty

I whipped up a simple and healthy meal for lunch. I love lentils. It’s been awhile since I’ve eaten them. While I was cleaning my pantry, I came across a lonely can.
Hmm! Lentils for lunch it is. Prep & cooking time – 20 minutes

Ingredients:

  • Tomatoes
  • Lentils
  • Spice
  • Kale
  • Coconut Oil
  • Greek yogurt

Instructions:

  1. Heat oil in deep pan
  2. Toss in rinsed lentils
  3. Add chopped tomatoes & a spoonful of yogurt
  4. Add kale & spices (I used cumin and garlic)
  5. Stir frequently until kale and tomatoes are cooked

Try it and tell me you didn’t go back for seconds! It’s delicious.
