I whipped up a simple and healthy meal for lunch. I love lentils. It’s been awhile since I’ve eaten them. While I was cleaning my pantry, I came across a lonely can.

Ingredients:
Instructions:
- Heat oil in deep pan
- Toss in rinsed lentils
- Add chopped tomatoes & a spoonful of yogurt
- Add kale & spices (I used cumin and garlic)
- Stir frequently until kale and tomatoes are cooked
Try it and tell me you didn’t go back for seconds! It’s delicious.
