Power food: Spicy Butternut Squash Soup

Butternut squash is definitely my food of choice lately. This fall harvest treat should have been on my radar long ago. I’ve been missing out. No more.

Last week I whipped up a tasty butternut squash and chickpea salad. This morning I set my sights on making a tasty Spicy Butternut Squash soup. My Vitamix makes every soup possible in a matter of minutes.

I used this Recipe: 2 cups of butternut squash, dash of salt, a few whole peppercorns, 1 cup of almond milk, 1 clove of garlic and a dash of cumin. I blended for about 6 minutes. Piping hot! Next time I will blend for less time because it wasn’t as thick as I like soup.

I whipped up enough for lunches this week. I’ve been so bored with my lunches lately. This will be a nice change especially in this cold weather. Yay for soup!
