Swiss Chard and Chickpea Stew

It never fails. Whenever I am doing well with my diet and my exercise, I fall off the healthy lifestyle bandwagon. Call it self sabotage or something like it. But no more. I am done skipping meals and eating out AGAIN. See the above dish? Swiss Chard and Chickpea Stew. This dish will be my saviour. Looks tasty, doesn’t it? I can’t make this one in my Vitamix so I almost feel like I am cheating or going back to 2011.
Here’s the recipe adapted from Fitness.com:
2 tablespoons olive oil
1 bunch chard
2 cups diced tomatoes
Pinch of spices and cayenne pepper
1 can of chickpeas
Water or veg stock
Splash of Lemon juice 
Directions:

Warm olive oil in large pot. Mix in chard, tomatoes, chickpeas and the rest of ingredients. Cover and simmer for 10 minutes.
