Green eats for this runner

A good solid two hours of my day was spent prepping my food for the week. I washed kale, swiss chard, red leaf lettuce, baby bok choy, spinach, celery, green beans, asparagus and tomatoes. 

I made a massive chickpea salad (chickpeas, green beans, nuts, cranberries, seeds and strawberries) and cooked a big pot of gluten-free vermicelli. At the same time, I prepped a big bowl of mushrooms and chopped garlic.
My refrigerator is now bursting with ready-to-eat goodness. This week I am determined to stay away from takeaways. There’s no reason I should forget to bring my lunch or snacks. Carleigh both a Vita-max on Friday. I am so jealous. I am waiting until next month to buy mine from Costco. Yes, I am going to pay $500 for a professional blender ($600 with dry container). Don’t judge me. It’s a lifestyle. 
I am 55 days away from Calgary. I’m getting scared and excited at the same time. There was a 10km race in Lacombe today. I was really tempted to race. But I still fear running in Lacombe because of last year’s injury. I know it’s a silly fear but I erred on the side of caution.
Now that I think more about it I should I have just ran it. For one thing it wasn’t on the trails. It was a road race. The first 5k was down hill and the rest was uphill. (You know how I love my hills). Besides it would have been a good indicator of where I am right now in my training. 

A rest day was just what I needed mentally and physically. I’m back to the grind tomorrow.

Monday: 10 km tempo
Tuesday: 6 km tempo/CrossFit
Wednesday: Hills (10 km)
Thursday: CrossFit
Friday: 10 km steady
Saturday: 6 km steady
Sunday: 32 km
