I know I have been power blogging this weekend. But I had to write about this delicious stirfry I made for dinner tonight. It was so good.
I tried the recipe from this website I have been reading for a while. I always have good intentions when it comes to reading food blogs.
But I am always short an ingredient or two so I don’t even bother.
Today I needed only three ingredients for this tasty stirfry – chickpeas, cherry tomatoes and spinach – all of which I had in my fridge. Score.
It was so delicious.
First you heat some oil in pan. Add chickpeas until they are brown (about 5 minutes). Then add cherry tomatoes and garlic (okay 4 ingredients). Stir around a bit until everything is warm. Then turn off the heat. Add spinach and stir until the spinach is a little wilted. Serve warm. Add pepper.
So yummy! I am on my second plate. I think it is the simple garlic and pepper that makes it so scrumptious. What do you think?
