Cold Sundays call for Comfort food!

Miso soup is so tasty. I put a handful of seaweed in this batch. I didn’t have any tofu but it turned out wonderful. Miso Soup is Japan’s chicken soup. Technically it is not vegetarian because dashi is essentially fish stock. I let this slip. The soup is full of antioxidants and some think a cup of soup a day will keep the doctor away.

I used my light coconut milk that’s been in my cupboard forever. I don’t like to use coconut milk very often because it is filled with fat. Comfort food was on the menu on Sunday because it was so damn cold. I added some Thai curry paste, peas, chickpeas and peppers. I didn’t have much in the way of veggies in my fridge. I used the last of my Jasmine rice too. Time to go grocery shopping.
