If you could smell my kitchen right now …. ahh the aromas of spiced brown lentils cooking in the Instant Pot.
In November, I completed a 30-day instant pot challenge. I had a great time getting to know my Instant Pot. I learned brown (or red or green) lentil curry is one of the easiest dishes to make in an Instant Pot. I have always loved lentils but I was never very good at cooking them – they were either too crunchy or too soft.
Enter the Instant Pot and I am winning at the lentil cooking game. My favourite lentil dishes feature brown and green lentils because they have that lovely earthy taste to them. Green lentils can be a little tough to find so look for them in the organic or speciality food markets.
Today I needed some comfort food so I whipped up an easy brown lentil curry. (If you don’t have an Instant Pot, cook lentils on the stove then add all the ingredients and cook in a frying pan on stove. At least that’s how I would do it.) I made enough for dinner and lunches. So tasty and filling.
Serve over rice or on its own. Enjoy!
Brown Lentil Curry
What you need:
- Instant Pot*
- Measuring cups
- Colander
- Mixing spoon
Ingredients
- One cup of brown lentils
- 1+ cup of chopped tomatoes
- Chopped garlic and ginger to your liking
- Spices*: Garam Masala, Garlic, Cajun, Cumin
- One cup of water
Instructions:
- Saute garlic and ginger for about a minute in Instant Pot. Use a dab water instead of oil so the garlic/ginger does not burn.
- Add tomatoes and spices. Stir around and saute for about a minute and a half. I used canned tomatoes so there was some extra liquid.
- Add lentils.
- Add one cup of water. Ensure the lentils are covered.
- Pressure cook for 12 minutes.
- Natural release then enjoy!
