You are what you eat, right?

Which silhouette do you resemble most? Mostly I try to eat to the left but there are days when I do fall completely apart and dive head first into the right. But all in moderation, right? As I mentioned a few days ago, I am eating pretty much clean these days. (Oh there were those 4 glasses of red on Thursday…) As always, I fail miserably when I do not plan my meals and snacks ahead.

I like to prep all my veggies by washing and slicing them on the weekends or day offs. I also prepare a big bowl of meaty mushrooms and beans. That way I have a ready made salad for lunch.

My workplace favorite high protein salad: I use a handful of one or two greens. I’ll add some mushrooms too. (I buy the big jar of dehydrated mushrooms from Costco) I’ll use sprouted beans too in place of the mushrooms. Next I take small handfuls of sliced almonds, walnuts, sesame seeds, dried cranberries, raisins and toss them into the mix. I have jars on my counter for my nuts and seeds so they are easily accessible. Lastly I will add fruit. Lately it’s been either chopped pear, apple or strawberry.

To make my salad even more healthier I mix up a quick vinaigrette. I’ve completely shunned store-bought salad dressings. Ta-da!
