I have been eyeing the avocados on my counter for close to a week, knowing they needed to be used before all five ended up in the compost. After a quick scan in the refrigerator, I grabbed two tomatoes, a bunch of cilantro and a carrot.
I decided to make a light, fresh and healthy dip. I don’t love guacamole especially since every recipe calls for onions. (I am allergic to onions.) So I set out to make my own version of guac, featuring the humble carrot: Carrot Avocado Dip.
I tossed all the ingredients into the Vitamix. And just like that I had a refreshing, flavourful and healthy dip.
Cilantro Carrot Avocado Dip
Ingredients
- Two tomatoes
- Two avocados
- 1 bunch of cilantro
- 1 carrot
- Dash of salt
- 1 tablespoon of minced garlic
- 2 tablespoons of lime juice
Directions
- Chop the tomatoes, carrots and cilantro
- Cut the avocados in half and remove the pits
- Add ingredients to Vitamix or high speed blender
- Add the minced garlic and lime juice
- Pulse for 30 seconds or until the ingredients reach your desired consistency
If you don’t have a high-speed blender or food processor, you can mash the ingredients together with a fork. Just be sure to dice the carrots very finely for a smoother texture.
Ways to enjoy this dip
I enjoyed this dip with tortilla chips but it’s also perfect with crackers or celery. You can even use it as a topping for salads or Buddha bowls.
