In My Veg Kitchen: “Raw” Veggie Burgers

Sometimes I am a rockstar in the kitchen. Last weekend I was definitely not signing autographs or posing for pictures with fans. 

Two of my culinary attempts were a big bust – cauliflower crust and “raw” quinoa brittle.

You know my regular quinoa brittle was a raging success. In the dehydrator, not so much. Nothing stuck to together. As for the cauliflower crust, I didn’t use enough of a binding agent so it also fell apart. I used my fake egg mixture but next time I will try using flax seed or trying a recipe. 

But one dish surprisingly did not disappoint – my “raw” veggie burgers. In case you are tuning in for the first time, they are not actually raw but “cooked” in the dehydrator. (I am on a raw food kick this month.)

I only had one hiccup with my attempt. I forgot to put in the sunflower seeds after I had already formed the patties so back into the Vitamix they went! I used a Vitamix to make these patties but I think a food processor (which I don’t have) would have been ideal. The Vitamix pulverized the ingredients making them a little too watery. Next time I will keep a better eye on the blender.

How did they taste? Amazing. Carleigh said they look like cookies – she’s right but they taste like mushroom burgers. I have been gobbling them up between two slices of lettuce. This is great healthty alternative to those store-bought burgers.

Ingredients
  1. 2 cups sunflower seeds (soaked overnight)
  2. 1 cup chopped tomatoes
  3. 1 cup carrots
  4. 1/2 chopped walnuts
  5. 2 cups chopped mushrooms
  6. A dash of cumin, chili powder and pepper
Instructions
  1. Put everything in a bowl
  2. Transfer to Vitamix or food processor
  3. Mix enough so the mixture is not too watery
  4. Use an ice cream scooper to create the patties
  5. Dehydrate for about 12-14 hours at 115F, depending on how firm you want them
  6. Enjoy with your favorite burger toppings
Notes
  1. If you don't want to eat "raw" you could simply pop the patties in the oven for 30 minutes at 400F.
