Remember a few weeks ago when I was so pumped to have one zucchini growing in my garden? I couldn’t wait to start harvesting and enjoying the tasty summer squash. But then I went on holiday for two weeks and left my garden to its own devices.Imagine my surprise when I came home to discover a batch of zucchini on steroids growing in my garden. Talk about crazy huge!
I picked eight of the biggest ones and left half a dozen for another time. I made plans to share with friends. Then I made a list of all the great things I want to make with my zucchini. After a quick Google search, I found zillions of cooking techniques – grilling, steaming, boiling, grilling, frying and much more.
Three Culinary Uses for Your Summer Squash
1. Muffins and bread loaves. I am not much of a baker but I thought what the heck. I made six loaves and cut them in pieces for freezing. This way I can enjoy a piece here and there without having to defrost the entire loave.
3. Chips. Oh you know how I love my zucchini chips. Now that I have mastered my mandoline slicer, I can safely and swiftly whip up a huge batch. The chips are healthy and very addictive.
