I am lacto-ovo vegetarian already so I share a lot of the same beliefs. However, I am not the best vegetarian in the world. Think boring, uncreative meals.
I always struggle with time and making quick eats. As I get more into the running scene and set more goals for myself, I’ve taken a hard look at my diet. There’s good stuff there but there’s a lot of room for improvement.
I’m still going strong with the out with the bagels in with the nutrition whim.
Thankfully Carleigh is trying to put a little more green in her diet too. We can be obsessive together!
Changing my eating habits when I return to work will be the most challenging. I need to prepare the week snacks and meals in advance. I do that somewhat now but not every day.
And on those days I would either skip a meal or simply eat toast. I know – bad vegetarian. (Hence why I am going cold turkey on toast and bagels).
My new eating goals starting yesterday:
- No more bagels or toast for breakfast
- Eat three meals and two snacks every day
- Try new recipes (including more homemade soups)
- Use more spices in my cooking
- Reduce intake of processed food
- Make my own salad dressings and sauces
Please make my lunch too! I am always finding myself needing more snacks throughout the day…usually consisting of granola bars and those damn goldfish crackers!
Prepare the night before! Ban the goldfish. Kill the goldfish. I bet they are loaded with sodium. Peanut butter (bring the jar and leave it at your office) and apple?
