Oven-Roasted Spicy Sweet Potatoes and Yams! Oh my!

I whipped up an ever so tasty lunch – tomato and spinach salad and roasted potatoes. I used cajun spices to coat the yams and sweet potatoes. I baked them  for 30ish minutes. And they turned out fabulous. My salad was simply spinach, Roma tomatoes, apples, walnuts and avocado with Greek yogurt dressing.

A few hours later, I went for an awesome 8k run. I am so relieved that I have overcome this pesky little injury. The left leg is not at 100% but close enough. So happy and so excited. New York, we’re coming!  It seems only yesterday that I won a spot through the lottery. Time sure does fly when you’re training.
