The Challenge: A Month of Instant Pot Meals Only

Pressure cook … Slow cook … Steam … Warm … Yogurt … Soup … Sauté …

Oh my!

Clearly I’m not using my Instant Pot enough. Making batches of rice and beans once a week isn’t cutting the investment or counter space. Since I bought my instant pot a couple of months ago, I haven’t made the time to experiment or figure out how to use this appliance to its full capacity. I want to … it’s just …

Ok starting today … it’s game on. The stove and oven are officially off the clock for 31 days. Goodbye baked potatoes. (Disclaimer: The Vitamix stays.)

This is going to be fun. I love a good challenge. A couple of years ago, I did a raw food challenge for an entire month while I did a 30-day hot yoga challenge. I smashed both challenges.

I can’t wait to get started.

This challenge will force me to learn how to use my Instant Pot. (Ugh. I might have to read the manual.) As well I am hoping to learn how to be a little more organized and prepared during the week.

I’ll check in with you once a week and let you know how it is going. I’ll also be posting photos and stories on my Instagram. My plan is to make a meal using every smart program on the Instant Pot. (For obvious reasons I won’t be using the meat button)

Challenge goals:

  1. Gain more confidence using my Instant Pot
  2. Add some variety to my diet
  3. Answer the question – What is PIP? Why would I use it?
  4. Spend less time in kitchen prepping and cleaning up (I hate the cleaning up bit)

Do you have an Instant Pot? What’s your favourite meal to make? What should I make? I would love to hear from you in the comments below.
