In My Veg Kitchen: Raw Peanut Butter Cookies

My mother surprised me with a batch of homemade peanut butter cookies when I last visited. (Pictured above.) It was my brother’s birthday today so I got to thinking about childhood memories. There weren’t many good ones to choose from but I remember the welcoming smell of fresh-baked cookies or homemade bread.

Feeling a little nostalgic, I was determined to whip up my raw twist on peanut butter cookies.

It was a messy, messy affair.

Dates are the star of this recipe. (You thought I was going to say peanut butter, right?) You’ll remember a few weeks ago I made a banana/coconut/date cookie concoction. I never gave dates much thought. They aren’t pretty and they do not look appetizing. But once you work some magic with them, they are the perfect base for treats. Plus they are super high in dietary fibre and a bunch of other important minerals.

Some recipes call for ground almonds but … have you seen the price of almonds lately? I decided to use ground walnut in my recipe. (They were on sale this week at Bulk Barn.) Walnuts are considered one of the world’s healthiest foods (tree nut?) and so versatile. They are a staple in vegan diets. Use them as “meat” in your taco recipes!

Ta da! I am going to bring this batch into work for our potluck on Thursday. I don’t usually like to bring sweets because that’s what most people bring. I will also bring a jar of kimchi and kombucha. I’m sure my coworkers will love the raw cookies. (They are not spicy! Not sure how many takers I will have on the kimchi.)

A tip? Put them in the freezer for about 15 minutes to let them firm up a bit before you store them in the cookie jar. I keep mine in the fridge so they keep their shape.


Raw Peanut Butter Cookies

Ingredients:

  • 3 cups of Dates
  • 2 cups Peanut butter/ground peanuts for topping
  • 1.5 cups Ground walnuts

Directions:

  1. Soak dates for an hour
  2. After draining the dates put them in the Vitamix
  3. Add peanut butter and ground walnuts
  4. Blend away for about a minute/Add water to get things moving
  5. Scoop out using ice cream thingy
  6. Make into balls, flatten into rounds
  7. Add ground peanuts for topping
  8. Put in fridge for an hour
  9. Enjoy

    Hmmm….guess a regular blender would work. Looks yummy!
