In my Veg Kitchen: Cauliflower Popcorn 

Oh what fun it is to flip the script on some ho hum vegetables. (It helps that I have a taste tester who will try almost anything.)

I’ve always thought cauliflower was rather blah. It’s like the tofu of the plant world – tasteless and boring until you add flavor. After wasting time staring at pictures on Pinterest, I decided to have my way with a head of cauliflower.


With one wave of my wand, I would turn this boring cauliflower into “popcorn.” Once again I found several recipes online that called for cooking or dehydrating the cauliflower. I adapted my recipe from All Recipes and Raw Manda to add my own twist. Fingers crossed my “popcorn” would be a crowd pleaser like my cauliflower wings.


My dehydrator has been put to good use this year. So happy I made the investment in my kitchen. It’s helping me look at food in a new way. I am also excited about reducing my produce waste. I digress …. back to the tasty, tasty popcorn.


After 12 hours of dehydrating – delicious! Loved, loved them! Don’t they look like popcorn? My only regret is that I did not fill my trays with cauliflower. I know this will be my new favourite snack. They are crispy and they shrink up quite a bit so they are like the size of popcorn. They weren’t that spicy. Next time I would like to try something like salt and vinegar or garlic.

Spicy Cauliflower Popcorn

Ingredients:

  • 1 head of Cauliflower
  • 2 tablespoons of Nutritional Yeast
  • 1-2 tablespoons of Cumin
  • 1-2 tablespoons of Chili spice
  • Enough Coconut oil to coat the cauliflower

Instructions:

  1. Cut cauliflower into little florets
  2. Add oil to the cauliflower
  3. Toss the cauliflower with the spices
  4. Line the dehydrator trays with the cauliflower
  5. Dehydrate for 12 hours
