After my long run on Sundays, I am full of energy so I put it to good use in the kitchen. I like to prep all my fruits and veggies for the week. You can imagine it’s a lot of work when you eat a plant-based whole food diet. But if you have a plan and stick to it you can save a lot of time.

I looked around my kitchen to find carrots and apples and more carrots and apples. What to do? For a change of pace, I whipped up a batch of Carrot and Apple muffins. I am not a baker so I was happy they turned out perfectly! They won’t last the week. (Simple muffin recipe with no dairy, eggs or sugar. I used an egg replacer, Almond milk and coconut oil.)

A couple of weeks ago, I went to Red Deer’s final public market where I bought a ton of tomatoes. They were a bargain for $5 a bag! Someone put the bug of salsa in my ear so I turned my tomatoes into salsa. The Vitamix pulverizes the tomatoes so it’s a little more watery than I prefer. I gave Sona and Brent a jar and they used the whole jar on their quesadillas. Success!

And I don’t usually do this … but I followed a recipe. I came across this video for One Pan Mexican Quinoa on one of my Facebook groups. I had all the ingredients so I gave it a go. Sona is going to try it this week too.

Ta da! Okay I didn’t have any avocado but it still tasted amazing! I had enough for my week day lunches.

I don’t know about you but some days are so action-packed that I barely have time to make a complete meal. I struggle the most with dinners because I am usually coming back from an event or a workout. Whew! I feel one step ahead already!

Do you prep your meals on Sundays or another day?

  1. I want to prep for meals on weekends when I have time, it’s a great idea, but I struggle with this! I’ve been better this fall, using my crock pot to make big meals! I saw that Mexican Quinoa bowl on Facebook too, I’m glad you tried it! Good to know it’s tasty! I was thinking that it would be good as a taco filling.
